Ingredients (9)

15.00 ml fresh chillies — 573
1.00 onion — medium, chopped
15.00 ml garlic — cloves, finely chopped
5.00 ml Tabasco sauce
350.00 ml wine — white
410.00 g tomatoes — chopped
2.00 kg mussels — black, cleaned
5.00 ml lemon — peel only
15.00 ml fresh coriander — chopped, to garnish

Method:

Heat oil in a large saucepan over moderate heat. Add onion and sauté over low heat until tender and golden in colour, about 5 minutes.
Add garlic, Tabasco sauce, wine and canned tomatoes (with their juice), and bring to boil.
Add mussels, cover with the lid and cook over moderate heat for 5 minutes, or until mussel shells open. Discard any mussels that do not open. Garnish mussels with lemon and coriander.
Serve with fragrant rice or chunks of fresh bread.
