Fragrant chicken with rice

    basmati rice
  • 5
    cloves garlic, crushed

    cumin seeds

    large onion, sliced

    chicken breast fillets, cubed
  • 10
    ground coriander
  • 15
    curry powder
  • 3
    cinnamon sticks
  • 5
    cardamom pods
  • 5
  • fresh coriander, to garnish

1. Soak rice in cold water for 15 minutes, wash and drain. 2. Mix garlic with 250 ml water. Heat oil and sauté onion and cumin seeds until browned. Add half the garlic water and simmer until water has evaporated. 3. Add chicken and remaining spices and cook for two minutes. Add rice, remaining garlic water and an extra 850 ml water. Stir well and bring to the boil. Reduce heat and simmer for 12 to 15 minutes, until rice is tender. Season to taste. 4. Serve with natural yoghurt and hot pickles and garnish with fresh coriander.
