Ingredients (11)

4.00 flapjacks — toasted
15.00 ml sun-dried tomatoes — paste
70.00 g mozzarella cheese — diced
2.00 button mushrooms — sliced
2.00 black pepper salami — sliced into strips
15.00 ml capers — rinsed
4.00 cherry tomatoes — sliced
4.00 olives — pitted, chopped
4.00 anchovy fillets — halved lengthways
sea salt and freshly ground black pepper
olive oil — for drizzling

Method:

Spread each flapjack with sun-dried tomato paste and sprinkle with the diced cheese.
Divide the remaining ingredients between the four flapjacks and arrange two anchovy halves in a cross on top. Season generously and drizzle with olive oil.
Grill until the cheese has melted and serve immediately.
