Fondue de tomates

    olive oil
  • 1
    onion, peeled and chopped
  • 4
    cloves garlic, chopped
  • 850
    tomatoes, chopped
  • 45
    tomato paste
  • salt
  • freshly ground black pepper
  • 30
    chopped Italian parsley
  • 1
    chilli, chopped


Heat oil in a saucepan. Add onion and sauté for one minute. Add garlic, tomatoes, tomato paste, seasoning, parsley and chilli and cook over moderate heat for 5 minutes. Add more chilli to taste, if desired. Transfer mixture to a warmed fondue pot and place over a burner. Pass around chunks of bread to dip in the tomato fondue. Serves 4.
