Ingredients (11)

15.00 ml oil
1.00 kg pork — lean, cubed
1.00 onion — cut into thick slices
1.00 garlic — cloves, crushed
25.00 ml curry powder — mild
3.00 tomatoes — large, peeled and chopped
250.00 ml apricot juice
50.00 ml lemon juice
50.00 ml chutney
1.00 apples — cored, peeled, diced
salt and freshly ground black pepper — to taste

Method:

Heat the oil in a large pan and stir-fry the pork cubes until lightly browned.
Add the onion and garlic and fry over low heat until the onions just become tender. Add the curry powder and fry for another minute.
Heat the tomatoes and apricot and lemon juices and add to the meat, along with the remaining ingredients.
Cover, reduce the heat and simmer the curry for about 1 hour. Remove the lid and. Simmer for another 5 to 10 minutes or until the sauce thickens slightly. If necessary, the sauce may be thickened slightly with cornflour.
Serve with rice.
