Flat rib and veggie stew

    beef flat rib

    cooking oil
  • 1
    onion, chopped
  • salt and freshly ground black pepper to taste

    heated meat stock
  • 3
    carrots, scraped and cut into pieces
  • 200
    green beans, cut into pieces
  • 10
    small potatoes, peeled
  • 15
    cake flour


about 1 1/2 hours
In a heavy-based saucepan, brown the meat (cut into 50 mm x 100 mm portions) in heated oil. Add the onion and sauté until soft. Add the seasoning and heated meat stock. Cover, reduce the heat and simmer until the meat is nearly tender. Add the vegetables and simmer until the meat and vegetables are tender. Season with extra salt and pepper if necessary and thicken the sauce with a little cake flour (mixed with water to form a paste) if desired. Serve with rice. Serves 6.
