Ingredients (11)

125.00 ml oil
125.00 ml milk
3.00 eggs — large
100.00 g sugar
210.00 g flour
1.00 ml salt
10.00 ml Baking powder
FRUIT
25.00 g butter
50.00 g castor sugar
2.00 oranges — juice only
450.00 g mixed berries

Method:

Beat the oil, milk, eggs and sugar together until the sugar dissolves.
Sift the dry ingredients together and add to the milk mixture.
Mix to make a smooth batter.
Allow to stand for 15 minutes.
Heat a lightly greased frying pan and drop spoonfuls of batter into it when hot.
When bubbles rise from the flapjacks, turn them over to cook them evenly on both sides.
Repeat with the remaining batter.
To prepare the fruit, melt the butter in a heavy-based frying pan, stir in the castor sugar and simmer gently until the mixture turns golden.
Add the orange juice and simmer until syrupy.
Add the fruit and heat through.
To assemble, pile a few flapjacks on top of each other and top with the fruit and sauce.
