Fish with herbed crumbs

Ingredients (9)

800.00 g hake fillets — frozen
sea salt and freshly ground black pepper
30.00 ml butter — melted
100.00 g breadcrumbs — fine, dry
15.00 ml fresh parsley — chopped
15.00 ml dried tarragon
1.00 lemon — zest only
50.00 ml butter — melted
45.00 ml lemon juice — fresh

Method:

Preheat the oven to 180 ºC and spray an ovenproof dish with non-stick spray or butter lightly.
Pat the fish fillets dry and season well with salt and pepper. Arrange in the prepared dish, leaving a little room in between.
Mix the breadcrumbs, herbs, lemon rind and 30 ml (2T) of the melted butter. Brush the fish fillets with the remaining melted butter and press the herbed mixture on top. Sprinkle with lemon juice. Cover the dish and bake for 15 minutes. Remove the cover and bake for another 10-15 minutes until the fish is done and flakes easily with a fork. Remove the fish from the oven and turn on the oven grill. Place the fish under the grill and grill until the crumbs have browned slightly. Serve immediately with steamed baby vegetables and buttered baby potatoes.
