Ingredients (11)

1.00 onion — sliced into rings
1.00 garlic — cloves, crushed
oil
100.00 g green beans — young, topped and tailed
200.00 g button mushrooms — sliced
2.00 celery stalks — sliced
baby corn
800.00 g hake — frozen fillets, cubed
salt and freshly ground black pepper — to taste
flour
SWEET 'N SOUR SAUCE
5.00 ml peri peri sauce

Method:

Sauté the onion and garlic in a little oil till soft. Add the vegetables and stir-fry t till just soft but still slightly crisp. Remove from the pan and set aside. Season the hake cubes with salt and pepper and roll in the flour. Fry a few cubes at a time in a little oil till slightly brown and done. Return the vegetables to the pan. Blend the sweet ‘n sour sauce with the peri peri sauce and pour over the fish mixture. Mix gently and heat through. Serve immediately.
Serves 4.
