Fish stew

  • 2
    red onions, chopped
  • 1
    clove garlic, crushed
  • 4
    tomatoes, peeled and diced
  • 70
    tomato paste
  • 250
    coconut milk
  • oil
  • 2
    small fish, whole (Tafi)
  • dhania leaves


Place onions, garlic and tomatoes in a blender and purée until smooth. Cut deep slits into fish and rub with mixed spices (see pilau recipe) pressing into slits. Heat oil and deep-fry fish. Remove and place in a saucepan, add tomato purée, tomato paste, coconut milk and chopped dhania leaves. Bring to the boil and simmer for about 10 minutes. Garnish with dhania leaves.
