Fish sosaties with piquanté mayonnaise

    sunflower oil

    clove garlic, crushed
  • 1
    onion, sliced
  • 10
    medium curry powder

    bay leaf

    grated ginger

    apricot juice

    lemon juice

    kingklip or other firm fish fillets, cubed

    soft dried apricot halves

    good-quality mayonnaise

    piquanté peppers, finely chopped


20 minutes
Heat oil in a saucepan and sauté the garlic and onion until soft.
Add curry powder and sauté for 30 seconds, then add bay leaf, ginger and apricot juice.
Simmer for five minutes, remove from the heat and add lemon juice. Leave to cool completely.
Thread fish cubes onto wooden skewers with an apricot half at the beginning and end of each sosatie.
Pour marinade over the fish and set aside to marinate for not longer than 30 minutes.
Place on a greased baking tray and grill for three to four minutes on each side. Season to taste with salt.
Stir the chopped piquanté peppers into the mayonnaise and serve with warm fish sosaties.
