Ingredients (12)

6.00 hake fillets — sole, skins removed
salt
freshly ground black pepper
25.00 ml fresh parsley — chopped
175.00 ml wine — white
30.00 ml butter
50.00 ml flour — cake
150.00 ml milk
100.00 g mushrooms — sliced
15.00 ml oil — or butter
4.00 potatoes — large, peeled and boiled

Method:

Preheat the oven to 180 ºC (350 ºF). Roll up the fish fillets and place in an ovenproof dish. Season to taste with salt and pepper and sprinkle a little parsley on top. Pour the wine over, cover and bake until the fish is done. Transfer the fillets to a serving platter. In the meantime make a thick white sauce with the butter, cake flour and milk. Add the wine sauce from the oven dish and blend until the white sauce is smooth. Season with more salt and pepper if necessary and spoon over the fish. Sauté the mushrooms in the heated oil until brown and arrange on top of the fish. Add a little milk to the potatoes and mash. Season with salt and pepper if necessary. Spoon into a piping bag and pipe the mashed potato around the fish on the platter or spoon it around the fish. Serve immediately.
