Fish parcels with bacon and banana

600.00 g hake fillets — frozen
sea salt and freshly ground black pepper
lemon juice
2.00 bananas — sliced
5.00 bacon — rashers, finely chopped
30.00 ml raisins

Method:

Preheat the oven to 200 ºC (400 ºF). Cut 4-6 fairly large pieces of aluminium foil to wrap the fish in.
Place a piece of fish on each piece of aluminium foil. Season with salt and pepper to taste and a little lemon juice. Arrange the banana slices, bacon and raisins on top and wrap the fish in the aluminium foil.
Place the parcels on a baking sheet and bake for 20 minutes or until done and the fish flakes easily with a fork. Bake uncovered for the last few minutes of the baking time.
Serve with a salad.
Serves 4-6.
