Place whole, butterflied fish such as hottentot or jakopewer, and fish steaks such as yellowtail on the grill and brush with lemon butter.
Close the grill and grill slowly, turning regularly and brushing occasionally with lemon butter.
Grill the fish skin side facing down during the last 10 minutes of the cooking time until cooked and succulent.
