Ingredients (11)

800.00 g hake — frozen fillets
500.00 ml cooked fish — leftover
1.00 onion — finely chopped
oil
40.00 g breadcrumbs — fresh
100.00 ml fresh parsley — chopped
5.00 ml Worcestershire sauce
salt and freshly ground black pepper — to taste
1.00 lemon — zest and juice
2.00 eggs — large, beaten
170.00 g evaporated milk

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a small 21 x 11 x 6 cm loaf tin with non-stick spray or grease well. Place the fish in a large mixing bowl and flake, removing the bones and skin at the same time. Sauté the onion in a little oil until soft and add to the flaked fish with the remaining ingredients, mixing well. Turn the mixture into the prepared loaf tin and bake for 30 minutes or until the breadcrumbs are done and browned. Remove from the oven and cool partially in the tin. Remove the loaf from the tin and cool completely. Slice and serve with plain yoghurt flavoured with chopped parsley.
Makes a small loaf.
