Filled country-style focaccia

  • 1
    crusty focaccia
  • 100
    olive oil
  • 45
    tomato chutney
  • 12
    slices cold cooked chicken breast
  • 6
    slices Parma ham or shaved ham
  • 12
    slices avocado
  • dash lemon juice
  • salt and milled black pepper
  • 12
    sprigs watercress


Slice focaccia horizontally into 3 layers. Brush first layer with olive oil and spread a thin layer of tomato chutney over. Cover with a layer of chicken and second slice of focaccia. Layer Parma ham and avocado on top. Season with lemon juice, salt and pepper. Add a little more chutney, cover with watercress sprigs and top with final slice of focaccia. Press down lightly and cut into thick wedges, using a sharp knife.
