Figs and berries poached in vanilla syrup

Ingredients (7)

500.00 ml water
1.00 pod vanilla — pod, split, seeds scraped
300.00 ml castor sugar
8.00 figs
200.00 g mixed berries — fresh
500.00 ml ice cream — vanilla or mascarpone, to serve
8.00 leaves fresh mint — to garnish

Method:

1. Place the water, vanilla seeds
and pod and the castor sugar in a
saucepan. Stir over a moderate heat
until the sugar has dissolved. The
mixture should not be allowed to boil
before the sugar has dissolved.

2. Place the fruit in the hot syrup
for about a minute, remove and
set aside. Allow the syrup to cool
completely and then return the fruit
to the syrup.

3. Serve the figs and berries with
vanilla ice cream, crème fraîche or
mascarpone. Add a mint leaf and
drizzle the syrup on top.

Variation: You can also serve it on
toasted raisin bread or brioche together
with crème fraîche or mascarpone
cheese and mint leaves.
Wine suggestion: Tickle your taste buds
with a fruity sparkling wine.
