Fig and lemon fillet

  • 1
    large beef fillet, trimmed
  • freshly ground black pepper and olive oil
  • 8
    dried figs, soaked in water until plump
  • 125
    extra virgin oilive oil
  • 250
  • 1
    lemon, grated peel


20 minutes
Rub fillet with pepper and oil.
Braai fillet for about 15 minutes on each side, or until done to taste and depending on the heat of the fire.
Meanwhile, chop figs and mix with olive oil, verjuice and lemon peel.
Transfer cooked fillet to fig mixture and leave to rest for five minutes, turning once or twice.
