Ingredients (6)

fresh thyme — and rosemary
500.00 g cherry tomatoes
50.00 ml fresh chillies — 573
sea salt and freshly ground black pepper
300.00 g feta cheese
bread — sliced, toasted

Method:

Preheat the oven to 200 ºC. Spread the herbs in an ovenproof dish and arrange the tomatoes on top. Baste with olive oil and season generously with salt and freshly ground black pepper. Bake for about 15 minutes until the tomatoes have shrunk slightly. Remove and leave to cool. Grill the feta rounds under the oven grill till lightly browned. Serve with the tomatoes and drizzle with the seasoned hot olive oil in which the tomatoes were baked. Serve immediately.
