Feta cheese salad with herb sauce

  • 100
    olive oil
  • 5
    white wine vinegar
  • pinch sugar
  • salt and pepper to taste
  • red pepper, seeded and diced
  • green pepper, seeded and diced
  • 45
    finely chopped herbs such as chives, basil and parsley
  • lettuce leaves
  • 4
    slices feta cheese


Turn on the oven grill. Blend the olive oil, wine vinegar, sugar and salt and pepper together. Add the diced peppers and herbs and set aside. Arrange the lettuce leaves on four individual salad plates. Place the feta cheese slices on a baking sheet sprayed with non-stick spray. Grill for 5-7 minutes or until the cheese is lightly browned on top. Place a slice of cheese on top of the lettuce leaves on each plate and moisten with the salad dressing. Serve immediately. Serves 4.
