Festive nut brittle

  • 75
    g
    butter
  • 270
    g
    white sugar
  • 125
    ml
    golden syrup
  • 250
    ml
    boiling water
  • 200
    g
    mixed nuts (eg pistachio, almonds, walnuts, pecans), shells removed
 

Method

 
1. Place butter, sugar, syrup and water in a pot. Dissolve sugar over gentle heat. 2. Turn up heat and boil mixture for 30 minutes. Do not stir. To test if ready, drop a little mixture in cold water. If it is ready, it will set hard and crack when broken. 3. Remove from heat and stir in nuts. 4. Pour into a lightly greased tray, 12 x 22 cm. When it has set a little, mark into bars. Break up when hard and store in an airtight container.
