Festival rice (Ic pilav)

Ingredients

    g
    butter
  • 1
    medium onion, chopped
  • 50
    g
    slivered almonds
  • 50
    g
    currants
  • 250
    g
    long-;grain rice
  • 750
    ml
    chicken stock
  • 2
    ml
    each of ground allspice, cinnamon and cumin
  • 200
    g
    chicken or lamb's liver, cubed
  • freshly chopped parsley, to garnish
 

Method

25 minutes
 
Heat 30 ml butter in a large saucepan. Add onion and almonds and stir-fry over medium heat for three minutes. Add currants, rice, stock, spices and seasoning to taste. Cover and cook over low heat for 10 minutes. Heat remaining butter in a frying pan, add liver and toss over high heat for three minutes, then stir into rice. Continue to cook rice, covered, for a further 10 minutes. Season to taste and garnish with chopped parsley.
