Fennel sauté

    sunflower oil
  • 1
    onion, peeled and sliced
  • 6
    young fennel bulbs, trimmed and quartered
  • salt and milled black pepper to taste
  • 10
    lemon juice (or more to taste)


Heat butter and oil in a heavy-based frying pan. Add onion and sauté until just softened. Add fennel, season and cover. Cook over moderate heat for 10 to 12 minutes, or until fennel bulbs have softened. Sprinkle with lemon juice and serve immediately.
