Fast fish curry

  • 1 tbsp oil for frying
  • 1 red onion, chopped
  • 4 cloves garlic, crushed
  • 1 tbsp minced fresh ginger
  • 3 large ripe tomatoes, chopped
  • 4 green chillies, halved
  • 1/2 can lite coconut milk
  • 10 curry leaves
  • large handful fresh coriander, chopped
  • small handful mint, chopped
  • salt to taste
  • 800 g fresh fish fillets, cut into chunks


Heat oil in a medium-sized pot.
Add onion, garlic and ginger and sauté for three minutes.
Add tomatoes, chilli, coconut milk, curry leaves and herbs.
Simmer until you have a rich gravy, about 15 to 20 minutes.
Season to taste.
Add fish and simmer until just cooked.
Serve with basmati rice.
