Farmhouse breakfast

    medium-sized potatoes, boiled until soft, peeled and cut into chunks
  • 125

    onions, sliced into rings
  • 10
    fresh button mushrooms, sliced
  • salt and freshly ground black pepper
  • 7
    freshly chopped thyme


Fry the bacon until cooked and remove from the pan. Sauté the onion and mushrooms in the pan fat until tender. Add the potato chunks and stir-fry for a few minutes. Return the bacon to the pan and mix. Season to taste with salt and pepper and fresh thyme. Serve hot with toast if desired. Serves 4-6.
