Ingredients (10)

30.00 ml sabja seeds
0.00 edible gold leaf
60.00 ml rose syrup
250.00 ml raspberries
1.00 orange jelly — prepared
45.00 ml condensed milk
250.00 ml cream — whipped
500.00 ml ice cream — vanilla
0.00 edible decorative balls — gold
125.00 ml pistachio nuts — halved to decorate

Method:

Soak the subja seeds in a little cold water for 10 minutes.
Rub some gold leaf onto the inside of four tumblers.
Divide the rose syrup and raspberries between the four glasses.
Cut the jelly into small cubes and add.
Mix the subja seeds, condensed milk and cream together.
Pour over the jelly.
Top with ice cream and decorate with gold balls and nuts.
COOK’S NOTES
Subja seeds, also known as basil seeds or tukmaria seeds, are available at Indian spice shops. Once soaked, they become coated with a jelly-like substance.
Falooda is a sweet drink, popular as part of an Indian meal. In this recipe, it has been transformed into a colourful dessert.
