Ingredients (11)

250.00 ml raisins
250.00 ml water — lukewarm
15.00 ml margarine
125.00 ml brown sugar — or demerara sugar
250.00 ml flour — wholewheat
125.00 ml flour — cake
125.00 ml oats
2.00 ml salt
5.00 ml Baking powder
5.00 ml Bicarbonate of soda
5.00 ml vanilla — essence

Method:

Soak raisins in lukewarm water for 10 minutes.
Meanwhile, cream margarine and sugar, then add remaining ingredients and mix.
Add the raisins and water and stir until combined.
Spray a muffin pan with non-stick cooking spray and fill with the batter. Bake in a preheated 180 ºC oven for 20 to 25 minutes.
Enjoy with cheesy pear and celery spread (see recipe).
