Ingredients (12)

2.00 garlic — cloves, crushed
1.00 onion — finely chopped
500.00 g beef mince — lean or ostrich mince
400.00 g tinned tomatoes — peeled
3.00 carrots — peeled and grated
1.00 celery — chopped
15.00 ml stock powder — beef
15.00 ml tomato paste
250.00 ml wine — white
5.00 ml sugar
0.00 salt and freshly ground black pepper
250.00 ml water

Method:

Heat olive oil in a large pot.
Add garlic and onion and sauté for 2 minutes until onions are glossy.
Add mince and cook to brown, about 5 minutes.
You will need to stir the mince constantly at this stage to avoid it clumping together.
Add the grated carrots and celery and cook for 3 to 4 minutes.
Pour in tomatoes, beef stock, white wine, tomato paste, sugar and water.
Reduce heat, cover and simmer for 10 to 15 minutes.
Remove lid and cook for at least 30 minutes.
Season well and serve.
Cook’s note
If you have a few lonely, slightly wrinkled cherry tomatoes, toss them in 10 minutes before serving or hunt down the odd limp courgette lurking in the back of the fridge, grate it and toss it in with the mince.
