Egg mayonnaise

  • salad leaves
  • 2
    hard-boiled eggs per person
  • 300
    prepared mayonnaise (homemade or bought)
  • capers
  • black olives, stoned
  • anchovies (optional)
  • lemon rind, finely grated


Arrange salad leaves on a plate. Top with halved eggs and spoon over homemade mayonnaise. Scatter with a few capers, olives and chopped anchovy. Add finely grated lemon rind and serve with crusty bread.
