Egg mayonnaise

  • salad leaves
  • 2
    hard-boiled eggs (per person)
  • 300
    prepared basic mayonnaise
  • capers
  • black olives
  • anchovies (optional)
  • lemon zest


Arrange salad leaves on a plate.
Top with halved eggs and, spoon over home-made mayonnaise.
Scatter with a few capers, olives and chopped anchovy. Add finely grated lemon zest and serve with crusty bread.
