Ingredients (8)

5.00 eggs — boiled, chopped
1.00 Tbs fresh chives — chopped
2.00 tsp capers — chopped
2.00 gherkins — chopped
125.00 ml mayonnaise
2.00 ml sea salt and freshly ground black pepper
8.00 slices bacon — cooked until crisp
4.00 leaves baby gem lettuce

Method:

Mix together the chopped
egg, chives, capers, gherkins
and mayonnaise. Season with
salt and pepper. Arrange the
gem lettuce leaves on plates
and spoon over the egg mayo.
Top with bacon. Serve with a
crusty loaf.
