Ingredients (10)

3.00 Litres flour — wholewheat
750.00 ml flour — cake
60.00 ml Baking powder
10.00 ml Cream of tartar
10.00 ml Bicarbonate of soda
15.00 ml salt
500.00 ml sugar
1.00 Litres water
500.00 g butter — or margerine
30.00 ml vinegar

Method:

Preheat the oven to 180 ºC and spray a large oven pan with non-stick spray or grease lightly with margarine. Mix the dry ingredients and rub in the butter. Mix the water and vinegar and add to the dry ingredients to form a soft dough. Turn into the prepared pan, spreading evenly. Bake for about 1 hour until cooked and pale brown. Cool and cut into squares. Dry out at 100 ºC for 3 hours, cool completely and store in airtight containers.
Makes 96 rusks.
