Bagged chicken and veg

    chicken thighs

    Portuguese mixed spices
  • olive oil

    baby carrots, peeled
  • 4
    large potatoes, peeled and cubed
  • 1
    onion, cut into wedges
  • 6
    garlic cloves, bruised
  • salt and pepper
  • a pat of butter
  • 60


Preheat the oven to 200ºc. Season the chicken with the salt, pepper and spices and spread a little olive oil over. Mix with the vegetables and divide between two baking bags. Dot each bag with a little butter, add 30ml water and close the bags.

Snip 6 holes in each bag and place them on a baking sheet. Bake in the preheated oven for 45 to 50 minutes or until cooked. Take care when you open the bags as the steam is very hot.
