Ingredients (9)

4x 1/4 chicken — thighs
15 ml portuguese spice — mixed
12 carrots — baby, peeled
4 potatoes — large, peeled and cubed
1 onion — cut into wedges
6 garlic — cloves, bruised
salt and freshly ground black pepper
butter
60 ml water

Method:

Preheat the oven to 200ºc. Season the chicken with the salt, pepper and spices and spread a little olive oil over. Mix with the vegetables and divide between two baking bags. Dot each bag with a little butter, add 30ml water and close the bags.

Snip 6 holes in each bag and place them on a baking sheet. Bake in the preheated oven for 45 to 50 minutes or until cooked. Take care when you open the bags as the steam is very hot.
