Easy cassata (Ice cream with nuts and fruit)

  • 25
    instant Nescafé coffee granules
  • 2
    vanilla ice cram, slightly softened
  • 50
    shelled pistachio nuts, chopped
  • 425
    black cherries, drained and sliced


Dissolve the coffee granules in a little hot water and mix into a third of the ice cream. Pour into a 2 litre glass bowl and freeze for about 30 minutes, until just set. (Keep the remaining ice cream in the freezer until 15 minutes before ready to mix.) Mix the nuts into half of the remaining ice cream and spoon on top of the coffee layer. Freeze until just set. Mix the remaining ice cream with the cherries and spoon over the nut layer. Freeze until firm. Unmould and serve sliced. Makes 2 litres.
