Ingredients (7)

4.00 eggs
500.00 ml castor sugar
200.00 g butter — or margerine
315.00 ml milk
625.00 ml flour — cake
15.00 ml Baking powder
4.00 apples — green

Method:

Preheat oven to 200 ºC. Grease an aluminium foil roasting pan.
Whisk eggs and 1 1/2 cups castor sugar together until mixture is thick and creamy.
Place butter and milk in a small saucepan, bring to the boil and stir into eggs and sugar.
Sift together flour and baking powder, then fold carefully into batter, making sure there are no lumps.
Pour mixture into prepared foil roasting pan.
Peel and core apples, slice and arrange over batter, and sprinkle with remaining sugar.
Bake in oven for 40 to 45 minutes until well risen and golden brown.
Cool in tin and cut into squares.
