Ingredients (12)

SHORTBREAD
120.00 g flour
135.00 g butter
35.00 ml cake — madeira loaf
45.00 g icing sugar
VANILLA SAUCE
20.00 g sugar
vanilla — essence
700.00 ml milk
2.00 eggs — just the yolks
BLUEBERRY SAUCE
250.00 g blueberries — liquidised
100.00 g sugar
grapes — green and red
brandy

Method:

1. Mix shortbread ingredients together. Roll out and cut into small rounds. Bake at 150 ºC until firm and brown.
2. Soak the sugar and vanilla essence in the milk. Bring the mixture to the boil; remove from the heat. Add the egg yolks, taking care not to recook the mixture.
3. Combine blueberries and sugar and bring to the boil.
TO ASSEMBLE : Marinate the grapes separately in a little brandy. Layer them alternately with the shortbread. Dust the top layer of shortbread with icing sugar.
ON THE PLATE
Pour blueberry sauce on one half of the plate and vanilla on the other. Where they meet, using a toothpick, combine the sauces. Serve.
