SAUCE
140.00 g sugar
5.00 ml cinnamon — ground
750.00 ml water — boiled
25.00 cornflour
BATTER
120.00 g flour — cake
7.00 ml Baking powder
salt — pinch
45.00 ml butter
2.00 eggs — extra-large

Method:

Combine the sugar, cinnamon and boiling water in a three litre glass bowl. Mix the cornflour with a little water and add to the remaining sauce ingredients. Stir well and microwave for 3 minutes on 100 per cent power or until the sauce boils rapidly. Stir twice during the cooking period. Sift the dry ingredients together and rub in the butter. Beat the eggs until light and add to the flour mixture. Mix well. (The mixture should be fairly slack). Drop spoonfuls of the batter into the hot syrup and cover. Microwave for 3-4 minutes on 80 per cent power. Leave in the microwave oven for a few minutes to cook through before serving with the syrup. Serves 4. Tested in a 600 W microwave oven.
