    whole cinnamon stick

    cake flour
  • pinch salt

    extra-large eggs, separated

  • extra butter, melted
  • cinnamon sugar


Set about 100 ml milk aside and bring the remaining milk, to which the cinnamon stick has been added, to the boil. Blend the reserved milk with the cake flour and salt, and add a little of the heated milk to the mixture. Blend well and then add to the remaining milk. Bring to the boil while stirring continuously. Allow to boil for a few minutes to allow the flour to cook. Beat the egg yolks and add the sugar, a little at a time. Beat until light. Add to the milk mixture and also add the 15 ml butter. Beat the egg whites and fold into the mixture. Insert a desert spoon into the melted butter and drop spoonfuls of the milk mixture into a bowl. Sprinkle with cinnamon sugar and pour over the remaining melted butter. Serve hot. Serves 8.
