Ingredients (14)

250.00 ml sultanas
125.00 ml currants
125.00 ml prunes — pitted
650.00 g breadcrumbs — wholewheat
500.00 g apples — Granny Smith, peeled, cored and grated
100.00 g pistachios, shelled — or walnuts
45.00 g butter
2.00 onions — medium, chopped
25.00 ml fresh parsley — chopped
2.00 ml ginger — ground
salt
black pepper — freshly ground
2.00 eggs — beaten
125.00 ml stock — chicken

Method:

1. Soak the dried fruit. Once swollen, drain and chop the prunes. Mix the breadcrumbs with the fruit and nuts in a large bowl.
2. Melt the butter and sauté the onion. Add to the crumb mixture with the parsley. Add seasoning. (The stuffing can be prepared to this stage 1 day before serving.)
3. Mix in the eggs and chicken stock.
