Dried beans and sausage stroganoff

  • 500
    sausages, such as cocktail sausages
  • oil
  • 1
    onion, chopped
  • 1
    red pepper, seeded and sliced into strips
  • 1
    green pepper, seeded and sliced into strips
  • 2
    cloves garlic, crushed
  • 250
    fresh mushrooms, sliced
  • 420
    chilli beans
  • 420
    cream of mushroom soup
  • salt and black pepper to taste

    sour cream


Fry the sausages in a little oil until golden brown. Remove from the pan and sauté the onion, peppers and garlic in the same pan until soft. Add the mushrooms and stir-fry until golden brown. Add the sausages, beans and soup and heat until the sauce thickens slightly. Season to taste with salt and black pepper and stir in the sour cream. Serve with rice or spinach noodles. Serves 4-6
