Ingredients (4)

500.00 g apricots — dried
1.00 kg sugar
480.00 g jelly — apricot
castor sugar

Method:

Rinse the apricots well and soak overnight in 1 litre cold water. Drain and mince. Place the minced apricots in a heavy-bottomed saucepan and add the sugar. Heat slowly, stirring continuously until all the sugar has dissolved. Bring to the boil and boil for 5 minutes. Remove from the heat and sprinkle the jelly powder over. Stir until dissolved and bring to the boil for 5 minutes. Pour into a greased pan and stand for 24 hours.
Cut into squares and dry for about 3 days indoors. Once the sweets are dry, roll them in castor sugar and store in airtight containers.
