Ingredients (10)

450.00 g apricots — dried, chopped
600.00 ml vinegar — white garpe
300.00 g sugar
2.00 cinnamon — stick
6.00 peppercorns — whole
5.00 ml whole coriander seeds
4.00 allspice — seeds
5.00 ml mustard seeds
1.00 green chillies
5.00 cm fresh ginger — peeled and grated

Method:

Soak the apricots in about 100 ml of the vinegar for 1 hour. Heat the remaining vinegar, sugar and seasonings in a large saucepan. Stir continuously until the sugar has dissolved and bring to the boil. Boil rapidly for 15 to 20 minutes. Add the apricots, reduce the heat and simmer for 15 to 20 minutes or until the mixture is no longer watery. Stir frequently, taking care the mixture does not burn. Bottle the chutney while still hot.
Makes 500 ml of chutney.
