Ingredients (9)

2.00 ml Bicarbonate of soda
125.00 g dates — finely chopped
30.00 ml margarine — diced
10.00 ml lemon — zest only
500.00 ml rooibos — tea, hot
1.00 eggs — extra-large, whisked
250.00 ml brown sugar — soft
315.00 ml flour — self-raising
2.00 ml mixed spice — ground

Method:

Preheat the oven to 180 ºC. Spray an ovenproof dish with non-stick spray.
Sprinkle the bicarbonate of soda over the chopped dates, add the margarine and lemon rind and pour over 250 ml (1 c) hot rooibos tea. Leave for 5 minutes.
Mix the whisked egg and half the brown sugar. Sift the self-raising flour and mixed spice together. Add to the date mixture and mix.
Pour the remaining 250 ml (1 c) rooibos tea into the prepared dish. Spoon the batter into the dish with the rooibos tea and sprinkle the remaining 125 ml (1/2 c) soft brown sugar on top. Bake for 45-60 minutes or until done.
Serve with custard or ice cream.
Serves 4-6.
