Ingredients (15)

375.00 ml chickpea flour — or chilli bite mix
15.00 ml flour — cake
5.00 ml Baking powder
0.00 0 onion — large, grated
0.00 0 potatoes — large, grated
0.00 0 green chilli — finely chopped
5.00 ml salt
5.00 ml turmeric — ground
5.00 ml cumin
2.50 ml dried chillies — crushed
2.50 ml masala — red leaf
5.00 ml garlic and ginger paste
60.00 ml fresh coriander — chopped
125.00 ml water — cold
500.00 ml oil — cooking, for deep frying

Method:

In a large mixing bowl, sift both flours and the baking powder. Add the remaining
ingredients, except the water and oil, and mix with just enough of the water to form a stiff
batter. Use more water if necessary, but note that the batter should be able to hold its
shape and not be runny.
Heat the oil in a small, deep pot or pan on medium heat. Once the oil is hot, add a
tablespoonful of batter, one spoon at a time, making sure not to overcrowd the pot and
to allow space for turning the bites. Slowly fry on either side till golden brown and crisp.
Monitor the temperature of the oil to ensure that it doesn?t become too hot while frying.
Pierce the chilli bite with a fork to test if properly cooked: if the fork comes out dry, then
the chilli bites are ready. Remove from the oil and drain in a colander or on paper towel.
