Devilled eggs

Time 30 minutes


  • 10
    hard-boiled eggs, peeled
  • 100
  • 6
    piquanté peppers, finely chopped
  • 20
    fresh coriander, finely chopped


Cut eggs in half lengthwise, remove yolks and place in a small bowl.
Mash with a fork, then mix in remaining ingredients and season to taste.
Spoon or pipe mixture back into the egg whites and refrigerate until ready to serve.
