Dessert platter

  • 200
    ripe Camembert or Brie cheese
  • 100
    blue cheese
  • 1
    glacé pineapple ring
  • 125
    mascarpone or ricotta cheese
  • 1
    glacé fig
  • 1
    glacé pear
  • caramelised pecan nuts
  • peri peri cashew nuts


1. Remove Camembert and blue cheese from the fridge an hour before serving (cheese tastes best served at room temperature, not chilled). 2. Slice glacé; pineapple ring into 6 fine rings and arrange on a large platter. Top each ring with a spoonful of mascarpone. 3. Cut both the Camembert and the blue cheese into 6 equal portions. Finely slice the glacé fig and pear into thin translucent slices. 4. Arrange cheese and fruit on platter. Intersperse with caramelised pecan and peri peri cashew nuts. 5. Serve accompanied by a rich ruby port.
