Ingredients (14)

SALAD DRESSING
80.00 ml walnut oil
80.00 ml fresh chillies — 573
30.00 ml vinegar — balsamic
15.00 ml lemon juice — fresh
1.00 garlic — cloves, crushed
cumin — pinch, ground
ground coriander — pinch
sea salt and freshly ground black pepper
SALAD
6.00 bacon — rashers
lettuce
1.00 green pepper — deseeded and sliced into strips
2.00 carrots — scraped, julienned
125.00 ml feta cheese — broken into pieces
125.00 ml nuts of your choice — cashew or macadamia

Method:

Blend all the ingredients for the salad dressing in a container with a lid. Shake well and refrigerate until needed.
Fry the bacon until crisp and chop finely. Set aside.
Arrange the lettuce leaves with the remaining salad ingredients on a pretty serving platter.
Sprinkle with chopped bacon and serve with the salad dressing.
