Delicious liver

  • 1
    aubergine, sliced
  • salt
  • oil for frying
  • 1
    onion, sliced
  • 1
    clove garlic, crushed
  • 1
    sheep's liver (outer membrane and hard veins removed), cut into strips
  • 125
    fresh button mushrooms, sliced
  • salt
  • pepper


Place the brinjal slices in a colander and sprinkle with salt. Leave for about half an hour. Heat the oil in a large saucepan and sauté the onion and garlic until soft. Add the liver strips and fry until nearly done. Add the mushrooms and sauté until done. Heat more oil in another pan and sauté the brinjal slices until cooked. Add the liver mixture, season to taste with salt and pepper and heat through. Serve with rice. Serves 6.
