Delicious haddock with potatoes

    cooked potatoes, skinned and sliced

    large onion, sliced into rings and sautéd in a little oil

  • salt and freshly ground black pepper

Preheat the oven to 180ºC (350ºF). Spray an oven dish with non-stick spray. Arrange a layer of potatoes in the bottom of the oven dish. Arrange the onion rings on top, followed by the haddock pieces. Season with salt and pepper to taste and pour over the sour cream. Bake for about 30 minutes or until the haddock is done and the dish is lightly browned on top. Serve with lemon wedges. Serves 4-6.
