Ingredients (8)

0.00 kabeljou — fillets, skinned
450.00 g baby potatoes — cooked, sliced
250.00 g baby tomatoes
250.00 g courgettes — sliced
50.00 ml fresh chillies — 573
25.00 ml vinegar — balsamic
0.00 salt and freshly ground black pepper — to taste
0.00 fresh basil — chopped, to garnish

Method:

Place the fish fillets in a large ovenproof dish and season well.

Scatter the sliced potatoes, tomatoes and courgettes over the fish.

Drizzle with olive oil and balsamic vinegar.

Bake in a preheated 190 °C oven for 25 to 30 minutes.

Remove from the oven and season with salt and freshly ground black pepper to taste.

Sprinkle with basil and serve with a green salad and crusty bread.
