Delicious baked fish

  • 4 x 175 g skinless kabeljou fillets (or other fish of your choice)
  • 450
    baby potatoes, cooked and sliced
  • 250
    baby tomatoes
  • 250
    courgettes, sliced
  • 50
    olive oil
  • 25
    balsamic vinegar
  • salt and pepper to taste
  • freshly chopped basil, to garnish


30 minutes

Place the fish fillets in a large ovenproof dish and season well.
Scatter the sliced potatoes, tomatoes and courgettes over the fish.
Drizzle with olive oil and balsamic vinegar.
Bake in a preheated 190 °C oven for 25 to 30 minutes.
Remove from the oven and season with salt and freshly ground black pepper to taste.
Sprinkle with basil and serve with a green salad and crusty bread.
